100% Chenin Blanc from the Lieut-Dit " Lieu-dit (plural: lieux-dits) (literally said-location) is a French toponymic term for a small vineyad area bearing a traditional name ( Les Fosses D'harreng). The name usually refers to some characteristic of the place, its former use, a past event, etc.
The Cave des Producteurs de Vouvray was created in 1953, at the initiative of a small group of wine growers. The initial project was to pool their resources and create a production tool able to make wines in sufficient volume to penetrate new markets, at the same time preserving a high level of quality which was essential to the commercial development of Vouvray wines, and more particularly the sparkling wines.
Sixty years later, the adventure continues with 40 wine growers, who work together 1100 acres of vineyards, distributed over the whole Vouvray Appellation area.
The vineyards are located on east-west-facing slopes at the bottom of a small valley near the city of Tours in the Loire Valley, 150 miles west of Paris.
Sandy-clay soil with a large amount of siliceous pebbles above and below the surface.
The sand-clay silt overlays a limestone bedrock. Vines : 60 years - 6.3 a - Yield : 45 Hl/Ha - 2.75 T/acre
The grapes are pressed slowly in a pneumatic press and the free-run juice ferments separately. The must is left to clarify for at least 24 hours, and then fermented at low temperature to enhance its aromatic delicacy.
Alcoholic fermentation stopped by chilling the wine to retain some residual sugar. The wine ages for approximately 6 months before bottling.
